- Canned diced tomatoes - 400g (1 can)
- Vegetable broth - 500ml
- Canned black beans, drained and rinsed - 240g (1 cup)
- Quinoa, rinsed - 100g (1/2 cup)
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Dried thyme - 1/2 teaspoon
- Salt - 1 teaspoon (adjust to taste)
- Black pepper - 1/2 teaspoon
- Fresh parsley, chopped - 2 tablespoons
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic, diced carrot, celery, and red bell pepper. Cook for another 5 minutes, stirring occasionally.
- Add the diced zucchini and cook for an additional 3 minutes, until slightly softened.
- Pour in the canned diced tomatoes with their juices and vegetable broth. Bring to a simmer.
- Stir in the black beans and quinoa, then add the cumin, paprika, thyme, salt, and black pepper.
