  • Celery, diced - 1 stalk (100g)

  • Zucchini, diced - 1 medium (150g)
  • Canned diced tomatoes - 400g (1 can)
  • Vegetable broth - 500ml
  • Canned black beans, drained and rinsed - 240g (1 cup)
  • Quinoa, rinsed - 100g (1/2 cup)
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Dried thyme - 1/2 teaspoon
  • Salt - 1 teaspoon (adjust to taste)
  • Black pepper - 1/2 teaspoon
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  2. Stir in the minced garlic, diced carrot, celery, and red bell pepper. Cook for another 5 minutes, stirring occasionally.
