  • Zucchini, diced - 1 medium (about 200g)
  • Canned diced tomatoes - 400g
  • Canned black beans, drained and rinsed - 240g
  • Canned kidney beans, drained and rinsed - 240g
  • Vegetable broth - 500 ml
  • Chili powder - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro, chopped (for garnish) - 2 tablespoons

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until translucent.
