Ingredients

  • all-purpose flour - 1 cup
  • oil - 2 tablespoons
  • water - 1/4 cup
  • potatoes - 2 medium, boiled and mashed
  • green peas - 1/2 cup, cooked
  • onion - 1 small, finely chopped
  • ginger - 1 teaspoon, grated
  • cumin seeds - 1/2 teaspoon
  • coriander powder - 1 teaspoon
  • garam masala - 1/2 teaspoon
  • salt - 1 teaspoon
  • black pepper - 1/4 teaspoon
  • cilantro - 2 tablespoons, chopped
  • oil for frying - as needed

Steps

  1. In a mixing bowl, combine the all-purpose flour and 2 tablespoons of oil. Gradually add water while kneading to form a smooth dough. Cover and let it rest for 20 minutes.
  2. In a pan, heat a tablespoon of oil over medium heat. Add cumin seeds and let them sizzle, then add the chopped onion and ginger. Sauté until the onion is translucent.
  3. Add the cooked potatoes, green peas, coriander powder, garam masala, salt, and black pepper. Mix well and cook for another 5 minutes. Stir in the chopped cilantro and remove from heat. Allow the filling to cool.
  4. Divide the dough into 4 equal portions and roll each into a ball. Roll out each ball into a thin oval shape, then cut it in half to form two semi-circles.
  5. Take one semi-circle, and form a cone by folding it over itself, sealing the edge with a little water. Fill the cone with the potato-pea mixture, then seal the open edge by pinching it together.
  6. Repeat the process with the remaining dough and filling. Heat oil in a deep pan over medium heat. Fry the samosas in batches until golden brown and crispy, about 5-7 minutes.
  7. Remove the samosas with a slotted spoon and drain on paper towels. Serve hot with your favorite dipping sauce.
