Ingredients

  • all-purpose flour - 1 cup (125g)
  • salt - 1/2 tsp
  • coconut oil - 3 tbsp (45g)
  • cold water - 4-5 tbsp (60-75ml)
  • olive oil - 1 tbsp (15ml)
  • onion - 1 small, diced
  • garlic - 2 cloves, minced
  • zucchini - 1 small, diced
  • red bell pepper - 1/2, diced
  • black beans - 1/2 cup (120g), cooked
  • cumin - 1 tsp
  • smoked paprika - 1/2 tsp
  • black pepper - 1/4 tsp
  • fresh cilantro - 2 tbsp, chopped
  • lime juice - 1 tbsp

Steps

  1. In a mixing bowl, combine flour and salt. Add coconut oil and mix with a fork until crumbly.
  2. Gradually add cold water, one tablespoon at a time, mixing until a dough forms. Knead gently for a minute, then wrap in plastic and refrigerate for 30 minutes.
  3. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté for 3-4 minutes until soft.
  4. Add zucchini and red bell pepper to the skillet, cooking for another 5-7 minutes until vegetables are tender.
  5. Stir in black beans, cumin, smoked paprika, black pepper, cilantro, and lime juice. Cook for 2-3 minutes, then remove from heat and let cool.
  6. Preheat the oven to 200°C (400°F).
  7. On a floured surface, roll out the dough to about 1/8 inch thick. Cut out circles using a 4-5 inch round cutter.
  8. Place 1-2 tablespoons of the filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal. Crimp edges with a fork.
  9. Place the empanadas on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.
  10. Serve warm, garnished with additional cilantro or a side of salsa.
