Ingredients

  • All-purpose flour - 150 grams
  • Unsalted butter - 75 grams, cold and cubed
  • Ice water - 3 tablespoons
  • Fresh tomatoes - 300 grams, sliced
  • Olive oil - 2 tablespoons
  • Fresh basil - 10 grams, chopped
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1, beaten
  • Grated Parmesan cheese - 30 grams
  • Balsamic vinegar - 1 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine the all-purpose flour and cold cubed butter. Use a pastry cutter or your fingers to incorporate the butter until the mixture resembles coarse crumbs.
  3. Add the ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
  4. On a floured surface, roll out the chilled dough into a circle about 3mm thick. Transfer it to a 20cm (8-inch) tart pan, pressing it into the edges. Trim any excess dough.
  5. In a skillet over medium heat, add olive oil and sauté the minced garlic until fragrant, about 1 minute. Remove from heat and mix in the chopped basil, salt, and black pepper.
  6. Layer the sliced tomatoes over the tart crust, overlapping them slightly. Brush the tomatoes with the beaten egg and sprinkle with grated Parmesan cheese.
  7. Drizzle with balsamic vinegar and bake in the preheated oven for 25-30 minutes or until the crust is golden and the tomatoes are tender.
  8. Remove from the oven and allow to cool for a few minutes before slicing. Serve warm or at room temperature.
