- All-purpose flour - 150 grams
- Unsalted butter - 75 grams, cold and cubed
- Ice water - 3 tablespoons
- Fresh tomatoes - 300 grams, sliced
- Olive oil - 2 tablespoons
- Fresh basil - 10 grams, chopped
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg - 1, beaten
- Grated Parmesan cheese - 30 grams
- Balsamic vinegar - 1 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, combine the all-purpose flour and cold cubed butter. Use a pastry cutter or your fingers to incorporate the butter until the mixture resembles coarse crumbs.
- Add the ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
- On a floured surface, roll out the chilled dough into a circle about 3mm thick. Transfer it to a 20cm (8-inch) tart pan, pressing it into the edges. Trim any excess dough.
- In a skillet over medium heat, add olive oil and sauté the minced garlic until fragrant, about 1 minute. Remove from heat and mix in the chopped basil, salt, and black pepper.
- Layer the sliced tomatoes over the tart crust, overlapping them slightly. Brush the tomatoes with the beaten egg and sprinkle with grated Parmesan cheese.
- Drizzle with balsamic vinegar and bake in the preheated oven for 25-30 minutes or until the crust is golden and the tomatoes are tender.
- Remove from the oven and allow to cool for a few minutes before slicing. Serve warm or at room temperature.
