Ingredients

  • Ripe tomatoes - 500 grams

  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Fresh basil - 5 leaves, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Heat olive oil in a medium pot over medium heat.
  2. Add the chopped onion, carrot, and celery; sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Chop the ripe tomatoes and add them to the pot, cooking for about 5 minutes until they begin to soften.
