- Sweet potatoes - 2 medium (about 400g)
- Olive oil - 2 tablespoons (30ml)
- Garlic powder - 1 teaspoon (5g)
- Onion powder - 1 teaspoon (5g)
- Ground black pepper - 1/2 teaspoon (2g)
- Salt - 1/2 teaspoon (3g)
- Thyme - 1 teaspoon (1g)
- Vegetable broth - 1/4 cup (60ml)
- Pecan halves - 1/4 cup (30g), chopped
- Breadcrumbs - 1/4 cup (30g)
- Nutritional yeast - 2 tablespoons (15g)
Steps
- Preheat the oven to 190°C (375°F).
- Peel and chop the sweet potatoes into small cubes.
- In a pot, add the sweet potatoes and cover them with water. Bring to a boil and cook for 15 minutes or until tender.
- Drain the sweet potatoes and return them to the pot. Add olive oil, garlic powder, onion powder, black pepper, salt, thyme, and vegetable broth. Mash until smooth and well combined.
- Transfer the sweet potato mixture to a small baking dish, smoothing the top with a spatula.
- In a separate bowl, mix the chopped pecans, breadcrumbs, and nutritional yeast until well combined.
- Sprinkle the pecan mixture evenly over the mashed sweet potatoes.
- Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
