Ingredients

  • Sweet potatoes - 2 medium (about 400g)
  • Olive oil - 2 tablespoons (30ml)
  • Garlic powder - 1 teaspoon (5g)
  • Onion powder - 1 teaspoon (5g)
  • Ground black pepper - 1/2 teaspoon (2g)
  • Salt - 1/2 teaspoon (3g)
  • Thyme - 1 teaspoon (1g)
  • Vegetable broth - 1/4 cup (60ml)
  • Pecan halves - 1/4 cup (30g), chopped
  • Breadcrumbs - 1/4 cup (30g)
  • Nutritional yeast - 2 tablespoons (15g)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Peel and chop the sweet potatoes into small cubes.
  3. In a pot, add the sweet potatoes and cover them with water. Bring to a boil and cook for 15 minutes or until tender.
  4. Drain the sweet potatoes and return them to the pot. Add olive oil, garlic powder, onion powder, black pepper, salt, thyme, and vegetable broth. Mash until smooth and well combined.
  5. Transfer the sweet potato mixture to a small baking dish, smoothing the top with a spatula.
  6. In a separate bowl, mix the chopped pecans, breadcrumbs, and nutritional yeast until well combined.
  7. Sprinkle the pecan mixture evenly over the mashed sweet potatoes.
  8. Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown.
  9. Remove from the oven and let it cool for a few minutes before serving.
