Ingredients

  • Sweet potato - 1 medium (200g)
  • Quinoa - 1/2 cup (90g)
  • Canned chickpeas - 1 cup (240g), drained and rinsed
  • Olive oil - 2 tablespoons (30ml)
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Spinach - 2 cups (60g), fresh
  • Lemon juice - 1 tablespoon (15ml)
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice the sweet potato into small cubes.
  3. In a bowl, toss the sweet potato cubes with 1 tablespoon of olive oil, salt, pepper, cumin, and paprika until evenly coated.
  4. Spread the sweet potato cubes on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender and lightly browned, turning halfway through.
  5. While the sweet potatoes are roasting, rinse the quinoa under cold water.
  6. In a saucepan, combine the rinsed quinoa with 1 cup (240ml) of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until all the water is absorbed.
  7. In a skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  8. Add the drained chickpeas to the skillet and cook for 5-7 minutes, stirring occasionally, until heated through and slightly crispy.
  9. Once the quinoa is cooked, fluff it with a fork and stir in the fresh spinach and lemon juice until the spinach wilts.
  10. To serve, divide the quinoa mixture into bowls, top with roasted sweet potatoes and crispy chickpeas, and garnish with chopped parsley.
