- Sweet potato - 1 medium (200g)
- Quinoa - 1/2 cup (90g)
- Canned chickpeas - 1 cup (240g), drained and rinsed
- Olive oil - 2 tablespoons (30ml)
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Spinach - 2 cups (60g), fresh
- Lemon juice - 1 tablespoon (15ml)
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Peel and dice the sweet potato into small cubes.
- In a bowl, toss the sweet potato cubes with 1 tablespoon of olive oil, salt, pepper, cumin, and paprika until evenly coated.
- Spread the sweet potato cubes on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender and lightly browned, turning halfway through.
- While the sweet potatoes are roasting, rinse the quinoa under cold water.
- In a saucepan, combine the rinsed quinoa with 1 cup (240ml) of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until all the water is absorbed.
- In a skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the drained chickpeas to the skillet and cook for 5-7 minutes, stirring occasionally, until heated through and slightly crispy.
- Once the quinoa is cooked, fluff it with a fork and stir in the fresh spinach and lemon juice until the spinach wilts.
- To serve, divide the quinoa mixture into bowls, top with roasted sweet potatoes and crispy chickpeas, and garnish with chopped parsley.
