  • Carrot - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Vegetable broth - 500 milliliters
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the diced onion and carrot, and sauté for about 5 minutes until softened.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Stir in the diced sweet potato, lentils, ground cumin, and ground coriander. Cook for 2-3 minutes to toast the spices.
