- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Vegetable broth - 500 milliliters
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat. Add the diced onion and carrot, and sauté for about 5 minutes until softened.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the diced sweet potato, lentils, ground cumin, and ground coriander. Cook for 2-3 minutes to toast the spices.
- Pour in the vegetable broth, and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot.
