- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Corn tortillas - 4 small
- Avocado - 1 medium, sliced
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, toss the diced sweet potatoes with olive oil, cumin, paprika, garlic powder, salt, and black pepper until evenly coated.
- Spread the sweet potatoes on a baking sheet in a single layer and roast in the preheated oven for 20 minutes, or until tender and slightly caramelized.
