- 2 large bell peppers (any color)
- 150 grams ground beef (Halal)
- 100 grams cooked rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup canned diced tomatoes
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley, chopped (for garnish)
Steps
- Preheat your oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes, then set aside.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes until softened.
- Add the ground beef to the skillet, cooking until browned, about 5-7 minutes. Drain any excess fat.
- Stir in the cooked rice, diced tomatoes, cumin, paprika, salt, and black pepper. Cook for another 5 minutes, mixing well to combine all flavors.
- Stuff each bell pepper with the beef and rice mixture, pressing down slightly to pack it in.
- Place the stuffed peppers upright in a baking dish and cover with aluminum foil.
- Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes to lightly brown the tops.
- Garnish with fresh parsley before serving.
