Ingredients

  • 2 large bell peppers (any color)
  • 150 grams ground beef (Halal)
  • 100 grams cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup canned diced tomatoes
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped (for garnish)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes, then set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes until softened.
  4. Add the ground beef to the skillet, cooking until browned, about 5-7 minutes. Drain any excess fat.
  5. Stir in the cooked rice, diced tomatoes, cumin, paprika, salt, and black pepper. Cook for another 5 minutes, mixing well to combine all flavors.
  6. Stuff each bell pepper with the beef and rice mixture, pressing down slightly to pack it in.
  7. Place the stuffed peppers upright in a baking dish and cover with aluminum foil.
  8. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes to lightly brown the tops.
  9. Garnish with fresh parsley before serving.
