- Large Portobello mushrooms - 4 pieces
- Cooked quinoa - 100 grams
- Walnuts, chopped - 30 grams
- Nutritional yeast - 2 tablespoons
- Garlic, minced - 2 cloves
- Fresh parsley, chopped - 2 tablespoons
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- Clean the Portobello mushrooms by gently wiping them with a damp cloth and remove the stems.
- In a mixing bowl, combine the cooked quinoa, chopped walnuts, nutritional yeast, minced garlic, fresh parsley, olive oil, lemon juice, salt, and black pepper. Mix well until all ingredients are combined.
- Stuff each Portobello mushroom cap with the quinoa mixture, pressing down slightly to pack it in.
- Place the stuffed mushrooms on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20 minutes, or until the mushrooms are tender and the tops are slightly golden.
- Remove from the oven and let cool for a few minutes before serving.
