Ingredients

  • Large Portobello mushrooms - 4 pieces
  • Cooked quinoa - 100 grams
  • Walnuts, chopped - 30 grams
  • Nutritional yeast - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Fresh parsley, chopped - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Clean the Portobello mushrooms by gently wiping them with a damp cloth and remove the stems.
  3. In a mixing bowl, combine the cooked quinoa, chopped walnuts, nutritional yeast, minced garlic, fresh parsley, olive oil, lemon juice, salt, and black pepper. Mix well until all ingredients are combined.
  4. Stuff each Portobello mushroom cap with the quinoa mixture, pressing down slightly to pack it in.
  5. Place the stuffed mushrooms on a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 20 minutes, or until the mushrooms are tender and the tops are slightly golden.
  7. Remove from the oven and let cool for a few minutes before serving.
