- whole wheat flour - 1 cup (120g)
- baking powder - 1 tsp
- baking soda - 1/4 tsp
- salt - 1/2 tsp
- olive oil - 2 tbsp
- Greek yogurt - 1/2 cup (120g)
- shredded cheese (cheddar or feta) - 1/3 cup (40g)
- chopped spinach - 1/2 cup (15g)
- chopped sun-dried tomatoes - 2 tbsp
- black pepper - 1/4 tsp
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.
- Add the olive oil and Greek yogurt to the dry ingredients and mix until just combined.
- Fold in the shredded cheese, chopped spinach, sun-dried tomatoes, and black pepper until evenly distributed.
- Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
- Pat the dough into a circle about 2.5 cm (1 inch) thick and cut it into 4 wedges.
- Place the scones on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
- Let cool for a few minutes before serving warm.
