Ingredients

  • whole wheat flour - 1 cup (120g)
  • baking powder - 1 tsp
  • baking soda - 1/4 tsp
  • salt - 1/2 tsp
  • olive oil - 2 tbsp
  • Greek yogurt - 1/2 cup (120g)
  • shredded cheese (cheddar or feta) - 1/3 cup (40g)
  • chopped spinach - 1/2 cup (15g)
  • chopped sun-dried tomatoes - 2 tbsp
  • black pepper - 1/4 tsp

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.
  3. Add the olive oil and Greek yogurt to the dry ingredients and mix until just combined.
  4. Fold in the shredded cheese, chopped spinach, sun-dried tomatoes, and black pepper until evenly distributed.
  5. Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
  6. Pat the dough into a circle about 2.5 cm (1 inch) thick and cut it into 4 wedges.
  7. Place the scones on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
  8. Let cool for a few minutes before serving warm.
