Ingredients
- All-purpose flour - 150 grams
- Unsalted butter - 100 grams, at room temperature
- Cream cheese - 100 grams, at room temperature
- Salt - 1/4 teaspoon
- Ground black pepper - 1/4 teaspoon
- Fresh dill - 2 tablespoons, chopped
- Fresh chives - 2 tablespoons, chopped
- Grated Parmesan cheese - 50 grams
- Chopped walnuts - 30 grams
- Egg - 1, beaten (for egg wash)
Steps
- In a mixing bowl, combine the flour and salt. Cut in the butter and cream cheese until the mixture resembles coarse crumbs.
- Knead the dough briefly until smooth, then wrap it in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a separate bowl, mix together the chopped dill, chives, grated Parmesan, chopped walnuts, and ground black pepper.
- On a lightly floured surface, roll out the chilled dough into a rectangle, about 3 mm thick.
- Spread the herb and cheese mixture evenly over the dough, leaving a small border around the edges.
- Cut the dough into triangles, starting from one edge and working to the opposite side.
- Roll each triangle tightly from the wide end to the tip and place the rugelach on the prepared baking sheet.
- Brush the tops with the beaten egg to give them a golden finish.
- Bake for 20-25 minutes or until golden brown. Let cool slightly before serving.
