Ingredients

  • All-purpose flour - 150 grams
  • Unsalted butter - 100 grams, at room temperature
  • Cream cheese - 100 grams, at room temperature
  • Salt - 1/4 teaspoon
  • Ground black pepper - 1/4 teaspoon
  • Fresh dill - 2 tablespoons, chopped
  • Fresh chives - 2 tablespoons, chopped
  • Grated Parmesan cheese - 50 grams
  • Chopped walnuts - 30 grams
  • Egg - 1, beaten (for egg wash)

Steps

  1. In a mixing bowl, combine the flour and salt. Cut in the butter and cream cheese until the mixture resembles coarse crumbs.
  2. Knead the dough briefly until smooth, then wrap it in plastic wrap and refrigerate for at least 30 minutes.
  3. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  4. In a separate bowl, mix together the chopped dill, chives, grated Parmesan, chopped walnuts, and ground black pepper.
  5. On a lightly floured surface, roll out the chilled dough into a rectangle, about 3 mm thick.
  6. Spread the herb and cheese mixture evenly over the dough, leaving a small border around the edges.
  7. Cut the dough into triangles, starting from one edge and working to the opposite side.
  8. Roll each triangle tightly from the wide end to the tip and place the rugelach on the prepared baking sheet.
  9. Brush the tops with the beaten egg to give them a golden finish.
  10. Bake for 20-25 minutes or until golden brown. Let cool slightly before serving.
