Ingredients

  • Brown rice - 100 grams
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Peas - 50 grams, frozen or fresh
  • Parmesan cheese - 30 grams, grated
  • Nutmeg - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the brown rice under cold water until the water runs clear.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until soft and translucent, about 3-4 minutes.
  3. Add the diced carrot to the saucepan and sauté for another 3-4 minutes until slightly tender.
  4. Stir in the rinsed brown rice, allowing it to toast for about 1-2 minutes, stirring frequently.
  5. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.
  6. Once the rice is cooked, stir in the peas, grated Parmesan cheese, nutmeg, salt, and black pepper. Mix well to combine and let it cook for an additional 2-3 minutes until heated through.
  7. Remove from heat and stir in the chopped fresh parsley before serving.
