- Brown rice - 100 grams
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Peas - 50 grams, frozen or fresh
- Parmesan cheese - 30 grams, grated
- Nutmeg - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the brown rice under cold water until the water runs clear.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until soft and translucent, about 3-4 minutes.
- Add the diced carrot to the saucepan and sauté for another 3-4 minutes until slightly tender.
- Stir in the rinsed brown rice, allowing it to toast for about 1-2 minutes, stirring frequently.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.
- Once the rice is cooked, stir in the peas, grated Parmesan cheese, nutmeg, salt, and black pepper. Mix well to combine and let it cook for an additional 2-3 minutes until heated through.
- Remove from heat and stir in the chopped fresh parsley before serving.
