- Basmati rice - 1 cup
- Vegetable broth - 2 cups

- Carrot - 1 medium, diced
- Green bell pepper - 1 small, diced
- Frozen peas - 1/2 cup
- Ground cumin - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced carrot, and green bell pepper to the pot. Sauté for an additional 3-4 minutes until the vegetables begin to soften.
- Stir in the rinsed rice, ground cumin, cinnamon, salt, and black pepper. Cook for 1-2 minutes, stirring frequently to coat the rice in the spices.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
- In the last 5 minutes of cooking, add the frozen peas on top of the rice, cover, and let steam.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
