Ingredients

  • Basmati rice - 1 cup
  • Vegetable broth - 2 cups
  • Olive oil - 2 tablespoons

  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Green bell pepper - 1 small, diced
  • Frozen peas - 1/2 cup
  • Ground cumin - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced carrot, and green bell pepper to the pot. Sauté for an additional 3-4 minutes until the vegetables begin to soften.
  4. Stir in the rinsed rice, ground cumin, cinnamon, salt, and black pepper. Cook for 1-2 minutes, stirring frequently to coat the rice in the spices.
  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
  6. In the last 5 minutes of cooking, add the frozen peas on top of the rice, cover, and let steam.
  7. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
