- Brown rice - 1 cup
- Vegetable broth - 2 cups
- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, chopped
- Zucchini - 1 medium, diced
- Corn - 1 cup (fresh or frozen)
- Black beans - 1 cup, drained and rinsed
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cheddar cheese - 1/2 cup, shredded
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 180°C (350°F).
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, chopped bell pepper, and diced zucchini to the pan. Sauté for another 5 minutes until the vegetables are slightly softened.
- Stir in the corn, black beans, cumin, paprika, salt, and black pepper. Cook for an additional 2 minutes.
- In a large mixing bowl, combine the cooked vegetable mixture with the brown rice and vegetable broth. Mix well.
- Transfer the mixture into a greased 9x9 inch (23x23 cm) baking dish and spread it evenly.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil, sprinkle the shredded cheddar cheese on top of the casserole, and bake for an additional 10 minutes until the cheese is melted and bubbly.
- Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro before serving.
