Ingredients

  • Brown rice - 1 cup
  • Vegetable broth - 2 cups
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, chopped
  • Zucchini - 1 medium, diced
  • Corn - 1 cup (fresh or frozen)
  • Black beans - 1 cup, drained and rinsed
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cheddar cheese - 1/2 cup, shredded
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic, chopped bell pepper, and diced zucchini to the pan. Sauté for another 5 minutes until the vegetables are slightly softened.
  4. Stir in the corn, black beans, cumin, paprika, salt, and black pepper. Cook for an additional 2 minutes.
  5. In a large mixing bowl, combine the cooked vegetable mixture with the brown rice and vegetable broth. Mix well.
  6. Transfer the mixture into a greased 9x9 inch (23x23 cm) baking dish and spread it evenly.
  7. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil, sprinkle the shredded cheddar cheese on top of the casserole, and bake for an additional 10 minutes until the cheese is melted and bubbly.
  9. Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro before serving.
