- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Corn - 1/2 cup, frozen or fresh
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lime - 1, juiced
- Cilantro - 1/4 cup, chopped (for garnish)
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic and diced red bell pepper, cooking for another 2-3 minutes until the pepper is tender.
- Add the brown rice to the saucepan, stirring to coat it with the oil and vegetables for about 1 minute.
- Pour in the vegetable broth, and add the cumin, paprika, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 25 minutes or until the rice is cooked and the liquid is absorbed.
- After the rice is cooked, stir in the black beans and corn. Cook for an additional 2-3 minutes to heat through.
- Remove from heat, squeeze fresh lime juice over the mixture, and fluff with a fork.
- Serve warm, garnished with chopped cilantro.
