- Quinoa - 1/2 cup (90g)
- Long grain rice - 1/2 cup (100g)
- Vegetable broth - 1 3/4 cups (420ml)
- Olive oil - 1 tablespoon (15ml)
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1/2 medium, diced
- Frozen peas - 1/2 cup (75g)
- Cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the quinoa under cold water until the water runs clear to remove bitterness.
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and bell pepper, and sauté for about 5 minutes until the vegetables are softened.
- Add the rinsed quinoa and long grain rice to the saucepan, stirring to combine with the sautéed vegetables.
- Pour in the vegetable broth, and add cumin, paprika, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the quinoa and rice are cooked and the liquid is absorbed.
- During the last 5 minutes of cooking, add the frozen peas to the saucepan, stirring gently to combine.
- Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and garnish with fresh parsley before serving.
