  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Bell pepper - 1/2, diced
  • Spinach - 1 cup, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the quinoa under cold water in a fine mesh strainer and set aside.
  2. In a medium saucepan, heat olive oil over medium heat. Add the diced onion, garlic, carrot, and celery, and sauté for about 5 minutes until they are softened.
  3. Add the diced bell pepper, cumin, paprika, salt, and black pepper to the pan, stirring for another 2 minutes until fragrant.
  4. Stir in the rinsed quinoa and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and let it simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed.
