  • Quinoa - 1 cup (uncooked)
  • Vegetable broth - 2 cups
  • Carrot - 1 medium, grated
  • Zucchini - 1 medium, grated
  • Green onion - 2, chopped
  • Garlic - 2 cloves, minced
  • Egg - 1 large
  • All-purpose flour - 1/4 cup
  • Parmesan cheese - 1/4 cup, grated
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the quinoa under cold water and then cook it in vegetable broth according to package instructions until fluffy, about 15 minutes.
  2. In a large bowl, combine the cooked quinoa, grated carrot, grated zucchini, chopped green onion, minced garlic, egg, all-purpose flour, Parmesan cheese, salt, black pepper, paprika, and chopped parsley. Mix until well combined.
