Ingredients

  • Quinoa - 1/2 cup
  • Green lentils - 1/2 cup
  • Chickpeas (canned, drained) - 1 cup
  • Fresh spinach - 2 cups
  • Carrot (diced) - 1 medium
  • Celery (diced) - 1 stalk
  • Onion (chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Vegetable broth - 4 cups
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrot, and diced celery. Sauté for about 5 minutes until the vegetables are softened.
  2. Add the minced garlic, cumin, paprika, salt, and black pepper to the pot. Stir for another minute until fragrant.

  4. After 15 minutes, add the drained chickpeas and fresh spinach to the pot. Stir well and cook for an additional 5 minutes until the spinach is wilted.
  5. Remove from heat, stir in lemon juice, and adjust seasoning if needed. Serve hot.
