  • Quinoa - 1/2 cup
  • Red lentils - 1/4 cup
  • Chickpeas (canned, drained) - 1/2 cup
  • Fresh spinach - 2 cups
  • Carrot, diced - 1 medium
  • Celery, diced - 1 stalk
  • Onion, chopped - 1 small
  • Garlic, minced - 2 cloves
  • Vegetable broth - 4 cups
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium pot, heat olive oil over medium heat. Add chopped onion, and sauté until translucent, about 3 minutes.

  5. After 15 minutes, stir in the chickpeas and fresh spinach. Cook for an additional 5 minutes until the spinach is wilted.
  6. Remove from heat and stir in lemon juice. Adjust seasoning if necessary before serving.
