- Chickpeas (canned, drained) - 1/2 cup (120g)
- Fresh spinach - 2 cups (60g)
- Carrot - 1 medium, diced
- Celery stalk - 1, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Vegetable broth - 4 cups (960ml)
- Olive oil - 1 tablespoon (15ml)
- Cumin - 1 teaspoon (2g)
- Paprika - 1 teaspoon (2g)
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
- Lemon juice - 1 tablespoon (15ml)
Steps
- Rinse the quinoa and lentils under cold water until the water runs clear.
- In a large pot, heat olive oil over medium heat. Add diced onion, carrot, and celery. Sauté for about 5 minutes until softened.
- Stir in the minced garlic, cumin, and paprika. Cook for an additional minute until fragrant.
- Add the quinoa, lentils, vegetable broth, salt, and black pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes until the quinoa and lentils are tender.
- Stir in the chickpeas and fresh spinach, and cook for another 5 minutes until the spinach is wilted.
- Remove from heat and stir in lemon juice before serving.
