Steps
- Preheat the oven to 180°C (350°F).
- Rinse the quinoa under cold water and drain.
- In a medium pot, bring vegetable broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed.
- In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes.
- Add diced zucchini, red bell pepper, and grated carrot to the skillet. Cook for another 5-7 minutes until vegetables are tender.
- Stir in chopped spinach, dried oregano, thyme, salt, and black pepper, cooking for an additional 2 minutes until the spinach wilts.
- In a large bowl, combine cooked quinoa, sautéed vegetables, and crumbled feta cheese. Mix well to combine.
- Transfer the mixture to a greased baking dish, spreading it evenly. Sprinkle breadcrumbs on top.
- Bake in the preheated oven for 20 minutes or until the top is golden and crispy.
- Remove from oven and let cool for a few minutes before serving.
