Ingredients

  • Quinoa - 1 cup
  • Vegetable broth - 2 cups
  • Zucchini - 1 medium, diced

  • Carrot - 1 medium, grated
  • Spinach - 1 cup, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Rinse the quinoa under cold water and drain.
