Ingredients

  • Quinoa - 1 cup (170g)
  • Water - 2 cups (480ml)
  • Fresh spinach - 2 cups (60g), chopped
  • Olive oil - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Feta cheese - 50g, crumbled
  • Lemon juice - 1 tablespoon (15ml)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the quinoa under cold water in a fine mesh strainer to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low, cover, and let simmer for about 15 minutes until the quinoa is fluffy and the water is absorbed.
  4. While the quinoa cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant.
  5. Add the chopped spinach to the skillet and cook for 3-4 minutes until wilted, stirring occasionally.
  6. Once the quinoa is done, fluff it with a fork and add it to the skillet with the spinach. Mix well.
  7. Drizzle lemon juice over the mixture, season with salt and black pepper to taste, and stir to combine.
  8. Serve the quinoa and spinach mixture in bowls, topped with crumbled feta cheese.
