- Ground cumin - 1/2 teaspoon
- Ground ginger - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chives, chopped - for garnish (optional)
- Pumpkin seeds - for garnish (optional)
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 5 minutes until translucent.
- Add the minced garlic and sauté for an additional 1 minute until fragrant.
- Stir in the ground cumin, ground ginger, cinnamon, salt, and black pepper, cooking for another minute to toast the spices.
- Add the pumpkin puree, vegetable broth, and coconut milk to the saucepan. Stir well to combine.
- Bring the mixture to a simmer, then reduce the heat and let it cook for about 15 minutes, stirring occasionally.
- Once cooked, use an immersion blender to purée the soup until smooth. If you prefer a thinner consistency, add more vegetable broth.
