- 200g pumpkin puree
- 100g chickpeas, drained and rinsed
- 50g breadcrumbs (gluten-free if desired)
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 2 whole grain burger buns
- 50g arugula or spinach
- 1 ripe avocado
- 1 tablespoon lime juice
- Salt and pepper to taste
Steps
- Preheat your oven to 200°C (400°F).
- In a bowl, combine the pumpkin puree, chickpeas, breadcrumbs, smoked paprika, garlic powder, onion powder, salt, and pepper. Mash the mixture until well combined but still slightly chunky.
- Form the mixture into two burger patties.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the avocado spread by mashing the avocado in a bowl. Add lime juice, salt, and pepper, mixing until smooth.
- Toast the burger buns in the oven for 3-4 minutes until slightly crispy.
- Assemble the burgers by spreading the avocado mixture on the bottom bun, adding the pumpkin patty, and topping with arugula or spinach. Place the top bun on and serve immediately.
