Ingredients

  • Puff pastry - 1 sheet (about 250g)
  • Spinach - 100g, chopped
  • Ricotta cheese - 100g
  • Feta cheese - 50g, crumbled
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1, beaten (for egg wash)
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a skillet, heat the olive oil over medium heat and sauté the minced garlic for about 1 minute until fragrant.
  3. Add the chopped spinach to the skillet and cook for 2-3 minutes until wilted. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the ricotta cheese, crumbled feta, sautéed spinach, salt, and black pepper. Mix well until combined.
  5. Roll out the puff pastry sheet on a lightly floured surface and cut it into 4 equal squares.
  6. Place a spoonful of the vegetable and cheese mixture in the center of each pastry square.
  7. Fold the corners of the pastry over the filling to form a pocket and pinch the edges to seal them tightly.
  8. Brush the tops of the pastry bites with the beaten egg and sprinkle with sesame seeds if desired.
  9. Arrange the pastry bites on a baking sheet lined with parchment paper.
  10. Bake in the preheated oven for 15-20 minutes or until golden brown and puffed.
  11. Remove from the oven and let cool for a few minutes before serving.
