Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red bell pepper - 1/2, diced
  • Green onion - 2 stalks, sliced

Steps

  1. Wash and peel the russet potatoes, then cut them into small cubes.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the diced onions and sauté for about 3-4 minutes until translucent.
  4. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  5. Add the cubed potatoes to the skillet and season with salt, black pepper, and paprika.
  6. Cook the potatoes for about 15-20 minutes, stirring occasionally, until they are golden brown and crispy.
  7. In the last 5 minutes of cooking, add the diced red bell pepper and stir to combine.
