- Unsalted butter - 1/4 cup (60g), cold and cubed
- Sour cream - 1/4 cup (60ml)
- Potatoes - 2 medium (about 300g), peeled and cubed
- Onion - 1 small, finely chopped
- Olive oil - 1 tbsp
- Black pepper - 1/2 tsp
- Garlic powder - 1/4 tsp
- Egg - 1, beaten (for egg wash)
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Add the cubed cold butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
- Stir in the sour cream until the dough comes together. Form into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Meanwhile, boil the cubed potatoes in salted water until fork-tender, about 15 minutes. Drain and mash until smooth.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Mix the sautéed onion into the mashed potatoes along with black pepper and garlic powder. Let the filling cool slightly.
- Preheat the oven to 190°C (375°F). On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut out circles, approximately 4 inches in diameter.
- Place a tablespoon of the potato filling on one half of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal. Brush the tops with beaten egg.
- Arrange the knishes on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until golden brown.
