- All-purpose flour - 1.5 cups
- Salt - 1/2 teaspoon
- Unsalted butter - 1/4 cup, cold and diced
- Ice water - 1/4 cup
- Potatoes - 2 medium (about 300g), peeled and cubed
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Paprika - 1/4 teaspoon
- Egg - 1, beaten (for egg wash)
Steps
- In a large bowl, combine the flour and salt. Add the cold diced butter and mix until the mixture resembles coarse crumbs.
- Gradually add ice water, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Meanwhile, boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and mash them in a bowl.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until golden brown, about 5 minutes.
- Combine the sautéed onion with the mashed potatoes. Season with black pepper and paprika, and mix well until smooth.
- Preheat the oven to 190°C (375°F).
- On a floured surface, roll out the chilled dough to about 1/4 inch thick. Cut into 4 squares.
- Place a generous tablespoon of the potato mixture in the center of each square. Fold the dough over to form a triangle and seal the edges by pinching them together.
- Place the knishes on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
- Bake for 25-30 minutes, or until golden brown. Serve warm.
