Ingredients

  • All-purpose flour - 1.5 cups
  • Salt - 1/2 teaspoon
  • Unsalted butter - 1/4 cup, cold and diced
  • Ice water - 1/4 cup
  • Potatoes - 2 medium (about 300g), peeled and cubed
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/4 teaspoon
  • Egg - 1, beaten (for egg wash)

Steps

  1. In a large bowl, combine the flour and salt. Add the cold diced butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add ice water, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Meanwhile, boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and mash them in a bowl.
  4. In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until golden brown, about 5 minutes.
  5. Combine the sautéed onion with the mashed potatoes. Season with black pepper and paprika, and mix well until smooth.
  6. Preheat the oven to 190°C (375°F).
  7. On a floured surface, roll out the chilled dough to about 1/4 inch thick. Cut into 4 squares.
  8. Place a generous tablespoon of the potato mixture in the center of each square. Fold the dough over to form a triangle and seal the edges by pinching them together.
  9. Place the knishes on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
  10. Bake for 25-30 minutes, or until golden brown. Serve warm.
