Ingredients

  • Potatoes - 400g, thinly sliced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Heavy cream - 120ml
  • Vegetable broth - 60ml
  • Olive oil - 1 tablespoon
  • Fresh thyme - 1 teaspoon, chopped (or 1/2 teaspoon dried)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Gruyere cheese - 50g, grated
  • Parmesan cheese - 25g, grated

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. In a bowl, combine heavy cream, vegetable broth, thyme, salt, and black pepper. Mix well.
  5. In a greased baking dish, layer half of the sliced potatoes evenly.
  6. Spread half of the sautéed onion and garlic mixture over the potatoes.
  7. Pour half of the cream mixture over the layer, then sprinkle with half of the Gruyere cheese.
  8. Repeat the layers with the remaining potatoes, onion mixture, cream mixture, and top with Parmesan cheese.
  9. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  10. Remove the foil and bake for another 15-20 minutes until the top is golden brown and the potatoes are tender when pierced with a fork.
  11. Let it sit for a few minutes before serving.
