Ingredients

  • all-purpose flour - 150 grams
  • unsalted butter - 75 grams, cold and cubed
  • ice water - 50 ml
  • salt - 1/2 teaspoon
  • medium potatoes - 2 (about 300 grams), thinly sliced
  • olive oil - 2 tablespoons
  • garlic - 1 clove, minced
  • fresh rosemary - 1 teaspoon, chopped
  • fresh thyme - 1 teaspoon, chopped
  • grated Parmesan cheese - 30 grams
  • black pepper - to taste

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, mixing until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
  3. Preheat your oven to 200°C (400°F).
  4. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  5. Add the sliced potatoes, rosemary, thyme, salt, and black pepper to the skillet. Cook for about 10 minutes, stirring occasionally, until the potatoes are slightly tender but not fully cooked. Remove from heat.
  6. Roll out the chilled dough on a floured surface into a 30 cm (12-inch) circle. Transfer it to a baking sheet lined with parchment paper.
  7. Layer the cooked potato mixture on the dough, leaving a 5 cm (2-inch) border. Sprinkle the grated Parmesan cheese over the potatoes.
  8. Fold the edges of the dough over the filling, pleating as necessary to create a rustic edge.
  9. Bake in the preheated oven for 25-30 minutes or until the galette is golden brown and the potatoes are tender.
  10. Allow to cool for a few minutes before slicing. Serve warm.
