- Russet potatoes - 2 medium (about 300g)
- Onion - 1 small (about 100g)
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Egg - 1 large
- All-purpose flour - 3 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 4 tablespoons (for frying)
Steps
- Peel and grate the potatoes into a large bowl, then squeeze out excess moisture using a clean kitchen towel.
- Finely chop the onion and mix it in with the grated potatoes.
- Add the minced garlic, chopped parsley, egg, flour, salt, and black pepper to the potato mixture, stirring until well combined.
- Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat.
- Using a tablespoon, drop spoonfuls of the potato mixture into the skillet, flattening them slightly with the back of the spoon.
- Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
- Transfer the cooked fritters to a paper towel-lined plate to drain excess oil, then repeat with the remaining mixture, adding more oil as needed.
- Serve warm, garnished with additional parsley if desired.
