Ingredients

  • Potatoes - 400 grams, thinly sliced
  • Onion - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Vegetable broth - 200 ml
  • Sour cream - 100 grams
  • Cheddar cheese - 100 grams, shredded
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat your oven to 190°C (375°F).
  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic to the skillet and cook for another minute until fragrant. Remove from heat.
  4. In a large bowl, combine the sliced potatoes, sautéed onions, vegetable broth, sour cream, paprika, salt, and black pepper. Mix well to coat the potatoes evenly.
  5. Grease a small casserole dish with a little olive oil. Layer half of the potato mixture in the dish, then sprinkle half of the shredded cheddar cheese on top.
  6. Add the remaining potato mixture on top and finish with the rest of the cheese.
  7. Cover the casserole with aluminum foil and bake in the preheated oven for 40 minutes.
  8. Remove the foil and bake for an additional 15 minutes, or until the top is golden brown and the potatoes are tender.
  9. Let the casserole cool for a few minutes before serving. Garnish with chopped parsley.
