- Potatoes - 400 grams, thinly sliced
- Onion - 1 medium, diced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Vegetable broth - 200 ml
- Sour cream - 100 grams
- Cheddar cheese - 100 grams, shredded
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Preheat your oven to 190°C (375°F).
- In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic to the skillet and cook for another minute until fragrant. Remove from heat.
- In a large bowl, combine the sliced potatoes, sautéed onions, vegetable broth, sour cream, paprika, salt, and black pepper. Mix well to coat the potatoes evenly.
- Grease a small casserole dish with a little olive oil. Layer half of the potato mixture in the dish, then sprinkle half of the shredded cheddar cheese on top.
- Add the remaining potato mixture on top and finish with the rest of the cheese.
- Cover the casserole with aluminum foil and bake in the preheated oven for 40 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the top is golden brown and the potatoes are tender.
- Let the casserole cool for a few minutes before serving. Garnish with chopped parsley.
