- Carrots - 100 grams, diced
- Celery - 100 grams, diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Green Lentils - 100 grams, rinsed
- Vegetable Broth - 500 ml
- Olive Oil - 2 tablespoons
- Fresh Thyme - 1 teaspoon, chopped
- Fresh Parsley - 1 tablespoon, chopped
- Bay Leaf - 1 leaf
- Salt - 1 teaspoon
- Black Pepper - 1/2 teaspoon
- Lemon Juice - 1 tablespoon
Steps
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent, about 5 minutes.
- Add diced potatoes, carrots, and celery to the pot. Stir and cook for another 5 minutes.
- Stir in the rinsed lentils, vegetable broth, bay leaf, salt, and black pepper. Bring to a boil.
