Ingredients

  • Potatoes - 250 grams, diced
  • Carrots - 100 grams, diced
  • Celery - 100 grams, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Green Lentils - 100 grams, rinsed
  • Vegetable Broth - 500 ml
  • Olive Oil - 2 tablespoons
  • Fresh Thyme - 1 teaspoon, chopped
  • Fresh Parsley - 1 tablespoon, chopped
  • Bay Leaf - 1 leaf
  • Salt - 1 teaspoon
  • Black Pepper - 1/2 teaspoon
  • Lemon Juice - 1 tablespoon

Steps

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent, about 5 minutes.
  2. Add diced potatoes, carrots, and celery to the pot. Stir and cook for another 5 minutes.
  3. Stir in the rinsed lentils, vegetable broth, bay leaf, salt, and black pepper. Bring to a boil.
