Ingredients

  • Russet potatoes - 2 medium (about 300g)
  • Zucchini - 1 medium, sliced (about 150g)
  • Carrot - 1 medium, diced (about 100g)
  • Red bell pepper - 1 medium, diced (about 150g)
  • Onion - 1 small, chopped (about 70g)
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons (30ml)
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 1 cup (240ml)
  • Shredded mozzarella cheese - 1/2 cup (60g)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Peel and thinly slice the russet potatoes using a mandoline or a sharp knife.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Add the minced garlic, diced carrot, and red bell pepper to the skillet. Sauté for another 5 minutes until the vegetables are slightly softened.
  5. Stir in the sliced zucchini, dried oregano, dried thyme, salt, and pepper. Cook for an additional 3-4 minutes until the zucchini is just tender.
  6. In a greased baking dish, layer half of the sliced potatoes on the bottom, followed by half of the sautéed vegetable mixture.
  7. Repeat the layers with the remaining potatoes and vegetables.
  8. Pour the vegetable broth evenly over the layered casserole.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  10. Remove the foil, sprinkle the shredded mozzarella cheese on top, and bake for an additional 15-20 minutes, until the cheese is melted and bubbly.
  11. Once done, remove from the oven and let it cool for a few minutes before serving.
  12. Garnish with fresh parsley before serving.
