- Red bell pepper - 1 medium, diced (about 150g)
- Onion - 1 small, chopped (about 70g)
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons (30ml)
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 1 cup (240ml)
- Shredded mozzarella cheese - 1/2 cup (60g)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 190°C (375°F).
- Peel and thinly slice the russet potatoes using a mandoline or a sharp knife.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced carrot, and red bell pepper to the skillet. Sauté for another 5 minutes until the vegetables are slightly softened.
- Stir in the sliced zucchini, dried oregano, dried thyme, salt, and pepper. Cook for an additional 3-4 minutes until the zucchini is just tender.
- In a greased baking dish, layer half of the sliced potatoes on the bottom, followed by half of the sautéed vegetable mixture.
- Repeat the layers with the remaining potatoes and vegetables.
- Pour the vegetable broth evenly over the layered casserole.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil, sprinkle the shredded mozzarella cheese on top, and bake for an additional 15-20 minutes, until the cheese is melted and bubbly.
- Once done, remove from the oven and let it cool for a few minutes before serving.
- Garnish with fresh parsley before serving.
