Ingredients

  • Potatoes - 200 grams, peeled and diced
  • Fresh spinach - 100 grams, washed and chopped
  • Eggs - 4 large
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a medium skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add the minced garlic and diced potatoes to the skillet, season with salt and pepper, and cook for about 10 minutes, stirring occasionally, until the potatoes are tender.
  4. Add the chopped spinach to the skillet and cook for another 2-3 minutes until wilted.
  5. In a bowl, whisk together the eggs and grated Parmesan cheese (if using), then pour the egg mixture over the potato and spinach mixture in the skillet.
  6. Cook on the stovetop for about 5 minutes, gently shaking the skillet to ensure the eggs set evenly.
  7. Transfer the skillet to the preheated oven and bake for an additional 10-15 minutes, or until the eggs are fully set and lightly golden on top.
  8. Remove from the oven, let it cool for a minute, slice, and serve warm.
