- Fresh spinach - 200 grams, chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced

- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Dried thyme - 1/2 teaspoon
- Dried oregano - 1/2 teaspoon
- Eggs - 2 large
- Milk - 120 ml
- Shredded mozzarella cheese - 100 grams
- Grated Parmesan cheese - 30 grams
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until they are translucent, about 3-4 minutes.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt, black pepper, paprika, thyme, and oregano. Remove from heat.
- In a large bowl, whisk together the eggs and milk until well combined. Stir in half of the mozzarella cheese and half of the Parmesan cheese.
- In a greased baking dish, layer half of the sliced potatoes at the bottom. Spread the spinach mixture evenly over the potatoes, then add the remaining potato slices on top.
- Pour the egg and cheese mixture over the layers, ensuring it covers everything. Sprinkle the remaining mozzarella and Parmesan cheese on top.
- Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
