  • Potatoes - 400 grams, thinly sliced
  • Fresh spinach - 200 grams, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Dried thyme - 1/2 teaspoon
  • Dried oregano - 1/2 teaspoon
  • Eggs - 2 large
  • Milk - 120 ml
  • Shredded mozzarella cheese - 100 grams
  • Grated Parmesan cheese - 30 grams

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until they are translucent, about 3-4 minutes.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt, black pepper, paprika, thyme, and oregano. Remove from heat.
  4. In a large bowl, whisk together the eggs and milk until well combined. Stir in half of the mozzarella cheese and half of the Parmesan cheese.
  5. In a greased baking dish, layer half of the sliced potatoes at the bottom. Spread the spinach mixture evenly over the potatoes, then add the remaining potato slices on top.
  6. Pour the egg and cheese mixture over the layers, ensuring it covers everything. Sprinkle the remaining mozzarella and Parmesan cheese on top.
  7. Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
