- 2 medium potatoes - 300 grams, peeled and thinly sliced
- 2 cups fresh spinach - 60 grams, chopped
- 1 small onion - 100 grams, diced
- 1 clove garlic - 5 grams, minced
- 1/2 teaspoon paprika - 2 grams
- 1/2 teaspoon ground cumin - 2 grams
- 1/4 teaspoon black pepper - 1 gram
- 1/2 teaspoon salt - 3 grams
- 1/2 cup shredded mozzarella cheese - 60 grams
- 1/2 cup ricotta cheese - 120 grams
- 1/4 cup vegetable broth - 60 ml
- 1 tablespoon olive oil - 15 ml
Steps
- Preheat the oven to 190°C (375°F).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing for about 3-4 minutes until the onion is translucent.
- Add the chopped spinach to the skillet and cook for another 2-3 minutes until wilted. Season with paprika, cumin, black pepper, and salt. Remove from heat.
- In a 9x9 inch (23x23 cm) baking dish, layer half of the sliced potatoes at the bottom. Spread half of the spinach mixture over the potatoes.
- Layer the remaining potato slices on top of the spinach, then pour the vegetable broth evenly over the layers.
- Dollop ricotta cheese over the top layer of potatoes and sprinkle with shredded mozzarella cheese.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly.
- Let the casserole cool for a few minutes before serving.
