Ingredients

  • 2 medium potatoes - 300 grams, peeled and thinly sliced
  • 2 cups fresh spinach - 60 grams, chopped
  • 1 small onion - 100 grams, diced
  • 1 clove garlic - 5 grams, minced
  • 1/2 teaspoon paprika - 2 grams
  • 1/2 teaspoon ground cumin - 2 grams
  • 1/4 teaspoon black pepper - 1 gram
  • 1/2 teaspoon salt - 3 grams
  • 1/2 cup shredded mozzarella cheese - 60 grams
  • 1/2 cup ricotta cheese - 120 grams
  • 1/4 cup vegetable broth - 60 ml
  • 1 tablespoon olive oil - 15 ml

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing for about 3-4 minutes until the onion is translucent.
  3. Add the chopped spinach to the skillet and cook for another 2-3 minutes until wilted. Season with paprika, cumin, black pepper, and salt. Remove from heat.
  4. In a 9x9 inch (23x23 cm) baking dish, layer half of the sliced potatoes at the bottom. Spread half of the spinach mixture over the potatoes.
  5. Layer the remaining potato slices on top of the spinach, then pour the vegetable broth evenly over the layers.
  6. Dollop ricotta cheese over the top layer of potatoes and sprinkle with shredded mozzarella cheese.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly.
  9. Let the casserole cool for a few minutes before serving.
