Ingredients
- Potatoes - 300 grams, peeled and thinly sliced
- Fresh spinach - 150 grams, washed and chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 200 milliliters
- Egg - 1 large
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutmeg - 1/4 teaspoon
- Shredded mozzarella cheese - 50 grams
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and chopped spinach to the skillet. Cook until the spinach is wilted, about 3-4 minutes. Remove from heat.
- In a mixing bowl, combine the vegetable broth, egg, salt, black pepper, and nutmeg. Whisk together until well blended.
- In a greased 20 cm x 20 cm (8-inch x 8-inch) baking dish, layer half of the sliced potatoes at the bottom.
- Spread the spinach and onion mixture evenly over the potatoes, then layer the remaining potatoes on top.
- Pour the broth and egg mixture over the layered potatoes and spinach, ensuring it seeps through the layers.
- Sprinkle the shredded mozzarella cheese evenly on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and the potatoes are tender when pierced with a fork.
- Let it cool for a few minutes before slicing and serving.
