  • Potatoes - 300 grams, peeled and thinly sliced
  • Fresh spinach - 150 grams, washed and chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 200 milliliters
  • Egg - 1 large
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Shredded mozzarella cheese - 50 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and chopped spinach to the skillet. Cook until the spinach is wilted, about 3-4 minutes. Remove from heat.
  4. In a mixing bowl, combine the vegetable broth, egg, salt, black pepper, and nutmeg. Whisk together until well blended.
  5. In a greased 20 cm x 20 cm (8-inch x 8-inch) baking dish, layer half of the sliced potatoes at the bottom.
  6. Spread the spinach and onion mixture evenly over the potatoes, then layer the remaining potatoes on top.
  7. Pour the broth and egg mixture over the layered potatoes and spinach, ensuring it seeps through the layers.
  8. Sprinkle the shredded mozzarella cheese evenly on top.
