Ingredients

  • Puff pastry sheets - 1 sheet (about 250g)
  • Olive oil - 1 tablespoon
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Spinach - 100g, fresh or frozen, chopped
  • Mushrooms - 100g, finely diced
  • Ricotta cheese - 100g
  • Feta cheese - 50g, crumbled
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1, beaten (for egg wash)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  3. Add the diced mushrooms and cook until softened, about 5 minutes.
  4. Stir in the chopped spinach and cook until wilted (if using fresh) or heated through (if using frozen).
  5. Remove from heat and mix in the ricotta cheese, feta cheese, oregano, salt, and black pepper until well combined.
  6. Roll out the puff pastry sheet on a lightly floured surface and cut it into 4 equal squares.
  7. Spoon a generous amount of the filling mixture onto the center of each pastry square.
  8. Fold the corners of the pastry over the filling to create a triangle shape and seal the edges by pressing with a fork.
  9. Place the pastry puffs on a baking sheet lined with parchment paper and brush the tops with the beaten egg.
  10. Bake in the preheated oven for 15-20 minutes or until golden brown and puffed.
  11. Remove from the oven and let cool slightly before serving.
