  • Vegetable broth - 2 cups (480ml)
  • Spinach - 1 cup (30g), chopped
  • Carrot - 1 medium (60g), diced
  • Red bell pepper - 1/2 medium (50g), diced
  • Zucchini - 1 small (100g), diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon (15ml)
  • Soy sauce - 1 tablespoon (15ml)
  • Black pepper - to taste
  • Chopped green onions - 2 tablespoons (10g), for garnish
  • Sesame seeds - 1 teaspoon (5g), for garnish

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the diced carrot, red bell pepper, and zucchini to the pan. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
  3. Pour in the vegetable broth and bring to a boil. Once boiling, stir in the rolled oats and reduce the heat to low.
  4. Cover and simmer for 10-12 minutes, or until the oats are cooked and the mixture has thickened. Stir occasionally to prevent sticking.
  5. Once the oats are cooked, add the chopped spinach and soy sauce. Stir well and cook for another 2-3 minutes until the spinach is wilted.
