- Vegetable broth - 2 cups (480ml)
- Spinach - 1 cup (30g), chopped
- Carrot - 1 medium (60g), diced
- Red bell pepper - 1/2 medium (50g), diced
- Zucchini - 1 small (100g), diced
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon (15ml)
- Soy sauce - 1 tablespoon (15ml)
- Black pepper - to taste
- Chopped green onions - 2 tablespoons (10g), for garnish
- Sesame seeds - 1 teaspoon (5g), for garnish
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced carrot, red bell pepper, and zucchini to the pan. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
- Pour in the vegetable broth and bring to a boil. Once boiling, stir in the rolled oats and reduce the heat to low.
- Cover and simmer for 10-12 minutes, or until the oats are cooked and the mixture has thickened. Stir occasionally to prevent sticking.
- Once the oats are cooked, add the chopped spinach and soy sauce. Stir well and cook for another 2-3 minutes until the spinach is wilted.
- Season with black pepper to taste. Serve hot, garnished with chopped green onions and sesame seeds.
