- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
- Lemon juice - 1 tablespoon
- Parmesan cheese - 2 tablespoons, grated (optional)
Steps
- In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the rolled oats and toast for about 2 minutes, stirring frequently.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for about 10 minutes, stirring occasionally, until the oats are creamy.
- In the last 5 minutes of cooking, add the fresh spinach, cooked lentils, and chickpeas to the oatmeal mixture.
- Stir in the cumin, salt, black pepper, and red pepper flakes (if using). Cook until the spinach wilts and everything is heated through.
- Remove from heat and drizzle with lemon juice. Serve hot, topped with grated Parmesan cheese if desired.
