  • Fresh spinach - 2 cups, chopped
  • Cooked lentils - 1/2 cup
  • Canned chickpeas - 1/2 cup, rinsed and drained
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - optional, to taste

Steps

  1. In a medium saucepan, bring 2 cups of water to a boil.
  2. Add 1 cup of rolled oats and reduce heat to low. Cook for about 5 minutes, stirring occasionally until the oats are tender.
