Ingredients

  • Rolled oats - 1 cup
  • Water - 2 cups
  • Cooked lentils - 1/2 cup
  • Fresh spinach - 2 cups, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Chili flakes - 1/4 teaspoon (optional)
  • Parmesan cheese - 2 tablespoons, grated (optional)

Steps

  1. In a saucepan, bring 2 cups of water to a boil.
  2. Add the rolled oats and a pinch of salt to the boiling water, then reduce the heat to low. Cook for about 5-7 minutes, stirring occasionally, until the oats are creamy.
  3. While the oats are cooking, heat 1 tablespoon of olive oil in a skillet over medium heat.
  4. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  5. Add the chopped spinach to the skillet, cooking until wilted, about 2-3 minutes.
  6. Stir in the cooked lentils, soy sauce, black pepper, and chili flakes (if using) into the skillet with spinach. Cook for another 2-3 minutes until everything is heated through.
  7. Once the oatmeal is cooked, divide it into two bowls. Top each bowl with the spinach and lentil mixture.
  8. If desired, sprinkle grated Parmesan cheese on top before serving.
