  • Chickpeas (canned, drained and rinsed) - 1 cup
  • Fresh spinach - 2 cups
  • Garlic (minced) - 2 cloves
  • Olive oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes (optional) - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium saucepan, bring 2 cups of water to a boil.
  2. Add 1 cup of rolled oats and a pinch of salt to the boiling water, reduce heat to low, and cook for about 5-7 minutes until the oats are creamy, stirring occasionally.
  3. While the oats are cooking, heat 1 tablespoon of olive oil in a skillet over medium heat.
  4. Add 2 cloves of minced garlic and sauté for about 30 seconds until fragrant.
  5. Stir in 1 cup of drained chickpeas, 2 cups of fresh spinach, 1 teaspoon of cumin, soy sauce, and black pepper to taste. Cook for about 5 minutes until the spinach wilts and the chickpeas are heated through.
