- Chickpeas (canned, drained and rinsed) - 1 cup
- Fresh spinach - 2 cups
- Garlic (minced) - 2 cloves
- Olive oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes (optional) - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- In a medium saucepan, bring 2 cups of water to a boil.
- Add 1 cup of rolled oats and a pinch of salt to the boiling water, reduce heat to low, and cook for about 5-7 minutes until the oats are creamy, stirring occasionally.
- While the oats are cooking, heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add 2 cloves of minced garlic and sauté for about 30 seconds until fragrant.
- Stir in 1 cup of drained chickpeas, 2 cups of fresh spinach, 1 teaspoon of cumin, soy sauce, and black pepper to taste. Cook for about 5 minutes until the spinach wilts and the chickpeas are heated through.
- Once the oatmeal is cooked, divide it into two bowls and top each with the chickpea and spinach mixture.
