Ingredients

  • Rolled oats - 100 grams
  • Whole wheat flour - 50 grams
  • Almond butter - 30 grams
  • Maple syrup - 30 grams
  • Nutritional yeast - 15 grams
  • Chopped fresh herbs (such as rosemary and thyme) - 10 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 60 ml

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the rolled oats, whole wheat flour, nutritional yeast, baking powder, salt, and black pepper.
  3. In another bowl, mix the almond butter, maple syrup, and water until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the chopped fresh herbs until evenly distributed.
  6. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 5 cm apart.
  7. Flatten each cookie slightly with the back of a spoon or your fingers.
  8. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
  9. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
