Ingredients
- Rolled oats - 1 cup (90g)
- Water - 2 cups (500ml)
- Olive oil - 1 tablespoon (15ml)
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Spinach - 1 cup (30g), fresh
- Cherry tomatoes - 1/2 cup (75g), halved
- Cumin - 1/2 teaspoon (2g)
- Paprika - 1/2 teaspoon (2g)
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
- Eggs - 2 large
- Fresh parsley - 2 tablespoons (8g), chopped
- Feta cheese - 50g, crumbled (optional)
Steps
- In a medium saucepan, bring water to a boil, then add the rolled oats and a pinch of salt. Reduce heat to low and let simmer for about 10-15 minutes, stirring occasionally until the oats are creamy and cooked through.
- While the oats are cooking, heat olive oil in a skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, cumin, and paprika to the skillet, cooking for an additional 1-2 minutes until fragrant.
- Stir in the spinach and cherry tomatoes, cooking until the spinach wilts and the tomatoes soften, about 3-4 minutes. Season with salt and black pepper.
- In a separate non-stick skillet, fry the eggs sunny-side up to your desired doneness.
- Once the oats are ready, divide them into two bowls. Top each bowl with the sautéed vegetables and a fried egg.
- Garnish with fresh parsley and crumbled feta cheese if desired, and serve immediately.
