  • Spinach - 1 cup (30g), fresh
  • Cherry tomatoes - 1/2 cup (75g), halved
  • Cumin - 1/2 teaspoon (2g)
  • Paprika - 1/2 teaspoon (2g)
  • Salt - 1/2 teaspoon (3g)
  • Black pepper - 1/4 teaspoon (1g)
  • Eggs - 2 large
  • Fresh parsley - 2 tablespoons (8g), chopped
  • Feta cheese - 50g, crumbled (optional)

Steps

  1. In a medium saucepan, bring water to a boil, then add the rolled oats and a pinch of salt. Reduce heat to low and let simmer for about 10-15 minutes, stirring occasionally until the oats are creamy and cooked through.
  2. While the oats are cooking, heat olive oil in a skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic, cumin, and paprika to the skillet, cooking for an additional 1-2 minutes until fragrant.
